Technically, it could be either.
The U inside a circle is for the OU - the Orthodox Union. You don't see that one alone, usually, because it's followed by either a 'dairy,' 'meat,' or 'parve' (that is, having neither dairy nor meat) signifier.
The K is found inside various symbols - usually a circle, triangle, square, or star - and is followed with the same signifiers.
Interestingly, because the letter 'K' may not be trademarked, a product can be labelled with a 'K' - implying that it is kosher - when, in fact, it is not. Jell-O is a fine example of this. However, all of the the OU and K-in-a-shape marks (known in Hebrew as hekhshers) are trademarks of organizations, which can in turn be trusted based on your faith in that organization, and used depending on the degree to which you keep kosher.
